7 Easy Weeknight Dinners Straight From Field Agents

After a full day at work or school or even at home, there’s nothing better than a homecooked meal. The problem is that sometimes, we run out of time to cook a warm meal. That’s why we asked our Agents for their favorite, easy weeknight meals.

7 Easy Weeknight Dinners Straight From Field Agents:

1. BBQ Shredded Chicken!

  • 1/2 Bottle BBQ sauce
  • 1 lb. chicken breast

‘Take half a bottle of low sugar BBQ sauce, 1 lb of chicken breast, place the chicken in the crockpot and pour the bbq sauce on top. Put it on low for 4-6 hours! Once done, take the chicken out to shred and then put back into the crockpot and stir in the sauces. You can serve it with broccoli and sweet potato fries or make lettuce cups!”

2. Lumpia

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 1 carrot, grated
  • 1/4 cup soy sauce
  • 2 1/2 teaspoons black pepper
  • 1 1/2 tablespoons garlic powder
  • 2 tablespoons salt
  • 1 (16 ounce) package spring roll wrappers
  • 1 1/2 quarts oil for frying

“In a Large bowl, combine ground beef, onion, and carrot. Make sure to completely mix everything. Knead the meat in the bowl if you must. Gradually blend in the soy sauce , black pepper, garlic powder, and salt until all ingredients are evenly distributed. Lay out a few wrappers at a time on a flat surface, and place about 2 tablespoons of the filling in a line down the center of the wrapper. Make sure the filling is no thicker than your thumb, or the wrapper will cook faster than the meat. Take the bottom and top edges of the wrapper and fold them towards the center. Take the left and right sides, and fold them towards the center. Moisten the last edge of the wrapper to seal. Now repeat using the rest of the wrappers. Heat the oil in a deep-fryer or heavy skillet to 375 degrees F (190 degrees C). Fry 3 or 4 lumpia at a time. Fry for about 3 or 4 minutes, turning once. Lumpia are cooked through when they float, and the wrapper is golden brown. Cut in half, or serve as is with dipping sauce. We like sweet and sour sauce, soy sauce with lemon, or banana ketchup.”

3. Chili Cheese Fries

  • 1 bag of frozen French fries
  • 1 can of chili (no beans)
  • 1 white onion
  • 1/2 jar of jalapeños
  • 2 cups of cheese

“Bake the bag of fries until they are crispy. Heat up the chili on the stove until hot. Chop up the onions in small squares. Once the fries are done top it cheese, onions and jalapeños. Spread the chili on top of everything to melt the cheese.”

4. Cheese Toastie

  • Bread
  • Cheese

“Heat up your sandwich toastie machine. Make a sandwich of cheese and bread. Spray oil or spread button on the outside. Put the sandwich in the machine. Allow to toast until thoroughly melted. Yum.”

5. Kicked Up Mac ‘N’ Cheese

  •  2 cups yellow cheddar
  • 2 cups white cheddar
  • 2 lbs frozen tater tots
  • 2 eggs
  • 1/4 tsp white pepper
  • 1 tsp salt

“Mix all ingredients together and pour in a 9×9 inch buttered casserole dish and bake for 60 minutes at 350 degrees.”

6. Creamed Tacos

  • Ground beef
  • 1 can of chili
  • 1 can of Rotel
  • 1 can of Pork and Beans
  • 1 can of ranch style beans
  • 1 can of diced tomatoes

Cooked ground meat, a can of chili with beans, a can of Rotel tomatoes, a can of pork and beans, a can of ranch style beans, and a can of diced tomatoes. All cans and the ground meat are combined in a large saucepan and cooked on the stovetop for 20 minutes. Once simmering, add a pouch of liquid Velveeta cheese and a small can of evaporated milk. Mix until blended and serve over Fritos Scoops.”

7. Timberlake Spaghetti

  • 1.5lbs ground chuck
  • 1 medium yellow onion diced
  • 2T butter
  • 2 cans Campbell’s condensed tomato soup plus 1 can of water
  • 3+ Tablespoons chili powder
  • 1 T sugar

In a skillet, sauté the onions until clear and then add the ground chuck and cook until browned. Stir in the rest of the ingredients, adding more or less chili powder as you desire. Simmer on the stove for at least 30 minutes to allow the flavors to cook through. Serve over your favorite pasta.”
